In a food processor, combine salt, sugar, and flower (and any other spices).
Cut in butter until the mixture is sandy and there are no butter chunks.
Add water one tbsp at a time until the dough is staying together, make sure to not add too much, or the dough will be tacky and come out not flaky enough.
Work into a disk and cover it with cling wrap.
Chill in the fridge for 2 hours.
When ready to use, roll out on a heavily flowered surface.

You can add spices like cinnamon (apple pie) or garlic (pot pie) depending on what you’re making.
