Oven Roasted Turkey

Ingredients

  • 18 Lb Turkey
  • Fresh Herbs (Thyme, Rosemary, Etc.)
  • 2 Large Carrots, Chopped
  • 2 Celery Stalks, Chopped
  • 1 Onion, Chopped
  • 2 Tbsp Butter
  • Vegetable Oil Spray

Directions

  1. Set oven rack to lowest position and preheat oven to 500°.
  2. Loosely pack turkey cavity with chopped veg and herbs.
  3. Place turkey breast side up on a V-shaped rack in a roasting pan.
  4. Mold tin foil to turkey and remove and spray with cooking oil, we will cover it later.
  5. Rub butter on top of the turkey getting in all the nooks and crannies.
  6. Place turkey in oven neck end first breast side up. 
  7. Roast for 30-40 minutes until golden brown on top.
  8. Remove the turkey from the oven and apply foil. Reduce heat to 350°.
  9. Cook for 2-2 ½ hours until temp reaches 180°
  10. Let rest for 30 mins and save drippings for gravy.
